Meatballs (very swedish) made in a new easy way!

Found this recipe at my pork supplier’s blog, in swedish.

Traditional meatballs are made with breadcrumbs, oatmeal or potatoes.

Neither of these fits in the LCHF diet.

This recipe fitted better with my believes!

And how much easier!!!!

I started with all the ingredients in a bowl:

1 lb ground pork

1 lb ground beef

1 egg

1 Tbsp salt

2 Tbsp onion powder

1/2 tsp ground black pepper

Mix everything well.

At the stove:

One pot with boiling water and a colander.

Wet your hands with cold water and roll meatballs and just drop them in the boiling water.

The done ones will start to float on the surface!

Pass them over to the colander and keep on rolling new ones.

At this time you can choose to let them cool and save them for later in the fridge or freezer.

When time to eat just fry them in plenty of butter to nice color.

This is half of my batch, I put half in the freezer.

First taste with a coleslaw and a salad.

Meatballs are one of the MUST on the swedish  “smörgåsbord”
