Our family’s favorite soup!
Today we had heavy rain all day, tonight there is the highest storm warning!
What can be cozier than a warming soup?
I have done this soup many times the last 30 years!
Very easy to cook and makes a lot.
Ground beef, cabbage, leek, Dijon mustard, heavy cream (40% fat) soy sauce, bay leaf, salt and pepper. And of course butter (forgot that in the photo)
I had almost 2 lb ground beef so I choose a big pot.
Melted about 1 stick of butter and fried the meat until no longer pink.
Added a good splash of soy sauce.
Had a bag with frozen leek that I added.
Added cabbage almost to fill the pot.
Stirred and fried until cabbage softens.
Added 3 Tbs of Dijon mustard, bay leaf, and 500 ml cream.
Filled to cover with water. Simmer about 10 minutes. Tasted…
and added another good splash of the soy sauce.
With all the soy sauce and the mustard salt and pepper was not needed!
I served the soup with 2 kinds of cheese.
The leftovers goes into the freezer.
