Chicken Curry with cauliflower.
In a pan: 3 Tbs butter, 1 Tbs curry powder, 4 crushed cloves of garlic and just a pinch of red curry paste.
About 1 1/2 lb chicken in cubes.
Heat the butter and spices, add the chicken and stir to coat all sides.
Add 1 cup of water and 1 cub of veggie bullion. (with no msg) Let simmer 10 min.
Add 1 cup of heavy cream, 1 cup of sour cream and 1/2 pkg. of philly cheese.
Before we started this LCHF diet I would have served this with rice.
Many “LCHF people” talks about shredded boiled cauliflower to sub the rice!
I have tried….what a mess…I think it is SO much easier to just add the cauliflower in pieces simmer 4 min. and eat like a hearty soup!
