Tjälknöl (Frost roast) The absolute easiest way to prepare a roast! Probably invented when someone tried to defrost a roast and forgot it in the oven!

Put a deep frozen roast in cold oven.

Put the oven on 212 F / 100 C.

After about 2 hours put a thermometer in the roast.

Bake to 150 F / 65 C  7-10 hours depending the size of the roast.

Boil a brine of:

1 litre water

100 ml salt

2 Tbs sugar

15 crushed juniper berries

1/2 tsp crushed black pepper

1 bay leaf

Or another brine:

1 litre water

100 ml salt

2 Tbs sugar

3 crushed cloves of garlic

In Sweden we can pick wild juniper berries.

Put the roast in a bowl that can take heat and pour the hot brine to cover it.

Place a plate and some kind of weight to keep it down.

Let stand in a cold place at least 5 hours (or over night)

Today I made a salad of cabbage, baby spinach (from my garden) tomatoes and red onion.

And blue cheese cold sauce: Fat yoghurt,sour cream, crumbled blue cheese, salt and pepper
