Dried funnel chanterelles I picked in the forrest last year (about 2 cups)
Soak in 4 cups of water for at least 30 min.
Drain, save the water.
Fry the chanterelles in butter add 2 chopped onions,3 cloves of garlic,salt pepper. Add the reserved water and simmer without lid about 20 min. I had some leftovers of mashed broccoli and cauliflower that I added here. I like to mix everything.
Add 2 cups of heavy cream (40% fat)
Served LCHF with chives and cheese.
